Sometimes called husk tomato; one species (cultivated) is the popular tomatillo. The ripe fruits were eaten by the native peoples living in the desert near the Colorado River. The fruits must be eaten ripe, or sickness can result.

These are eaten like tomatoes, and can be used in salsa, salads, soups, and stews. The Indians would more commonly cook the fruits into stews, often with meat. When there was a sufficient crop, they would be dried for winter use. The dried fruits would be used as a condiment, or to make sauces for other dishes.

In Stalking the Wild Asparagus, Euell Gibbons points out that varieties of Physalis are found throughout the United States. He shares a story about finding it also growing on the island of Maui in Hawaii. He ate the fruit raw to quench his thirst and hunger. He also describes the fruit made into salads, jams, and preserves. As you might discover by reading Gibbons, he loved wild foods, but wasn’t that particular about using only healthful foods. So his jams and preserves (like the recipes found in most cookbooks) are loaded with white sugar. You’d have to experiment if you want to use a more healthful sugar substitute.
